Most people will still say, "Where is the evidence" as their convenient rationalization to continue eating beef--minus a hot dog or two. They will look around themselves, see their friends and neighbors eating beef and conclude beef doesn't hurt them, so eating beef is alright. All it takes is for one neighbor to eat beef, for someone who is prejudiced towards proving his theory (hypothesis) right--namely, that beef is still o.k., healthy and tasty.
Look at the first sentence of the copied paragraph (below).
Why decline to interview the veterinarian unless you want to hide or suppress some information? So the sleepy heads can keep on asking, "Where is the evidence?"

Instead it provided MSNBC with a copy of the Dec. 9 inspection report on that load of cattle, which showed the cow as “sternal,” or lying on its stomach, but alert. USDA spokesman Daniel Puzo said the agency based its conclusions about the cow's downer status on the report and on its forensic investigation."
The government spokesman said they based their judgement on what the veterinarian said and they believed the doctor's word. Well, are all doctors honest, or just some? (How many is some?) To be fair about this expert-testimony-controversy, why do you need 6 or 8 years of college education in order to determine whether a (downer) cow is standing on its feet and walking, or lying down on its stomach?
Can't a first grader decide whether the cow in his picture book is standing or lying down and then maybe write a sentence about it?
I think the man who is contradicting the government's veterinarian knows what he is talking about, as he has many years of experience in this line of work and in spotting and shooting downer cows. And out in the field, he doesn't determine downer cows by microscopic analysis of a slide of their tissue before he shoots them. The test in the field is whether the cows can walk or not.
