"He said to picture the bees flying through a doorway that has been reduced in size. There are brushes along the side, which brush off the pollen when the bee returns to the hive. The pollen is collected below in sterile containers."

This concurs with the information I was able to find online; quotes such as:

"Bee Pollen is gathered from pollen laden bees by a special device placed at the entrance of the hive. The device is designed to brush the material from the bees' legs."

"At the hive, bee handlers place a special device near the entrance that brushes this precious material from the bee’s hind legs."

I have not, unfortunately, discovered any description that goes into great detail as to what this "device" is, and indeed, if it might be harmful to the bees in any way. I am wondering then, if the device is capable of stripping the pollen from the hind legs, then might it also be capable of stripping the hind legs themselves? I know from my own observation that bees tend to enter the hive at a fair pace, so I am concerned that even brushes (as innocent as they sound) may do some harm.

I think, given the uncertainty, that I shall stop consuming bee pollen, even though I believe intently in its beneficial properties. If even one bee in a thousand dies or is rendered legless in order for me to eat a little goodness, then that is one too many for me to cope with.
