A very easy way to cook beet is to roast them. Just toss whole beets (trim the greens off) in some olive oil, salt and pepper. Heat your oven to about 350 degrees, put the beets in a baking dish with a little water (like an inch on the bottom). Bake untill soft. Depending on the size, it will take about 45 minuts. Covering the beet while baking will speed things along, leaving them uncovered will cause them to carmelize more. This method will bring out the natural sugars and they taste great! I like warm beets with bitter greens and blue cheese.
