Check with Andreas here on CureZone. So far he's the only health person I know of who agrees with me about raw wheatgrass. For info about the plant toxins you have to talk to animal people. :) Grazing cattle and sheep is NOT an easy thing to do, there's a lot to know. They know all about the level of toxins in various plants. So if you read agricultural studies for feeding animals you'll find the info on the toxins, but never yet has anyone posted the same info in terms of people, sigh.

You're absolutely right about freeing things from fiber, and this is one of my main arguments in support of juicing veggies. But wheatgrass itself has protective agents against molds, mildews and fungus that get juiced along with the good nutrients, and it is these protective agents that are toxic to humans. If you take it as liquid chlorophyll or in something like Perfect Food where it's been dehydrated and such, these toxins are de-activated.
