I read on one site (Dom's kefir site I think) that theh ph should be around 3.9 which makes sense as that the level of acidity is recommended for EM too, but mines testing at 6.5!.....but then I only fermented for a day or two. It still seemed to work though...its quite cleansing, I'm having more bms, so I dont know....this is the first time I've made it.

Yes I've read conflicting info too about whether you're supposed to throw away the first batch. I agree with you and the people I would trust more ie Dom, Sally Fallon and Ann Wigmore say the rejuvelac is the liquid from the sprouted grains so you throw away the first one or two liquid batches. Plus we should avoid phytates anway....if you're sprouting you're supposed to throw away the soaked water for the same reason. If you feel its purer, follow your gut. Which grain are you using? What benefits have you had from it?
