I'm not sure about the fermentation aspect of the sugar. From what I have read, the bacteria actually ingest the Sugar then the bacteria expel hydrogen which enters the bloodstream through the intestinal wall lining, then travels via the blood to the lungs and is expelled through the breath. Now, I would guess that this process and fermentation are linked, but I'm not sure how.
