I posted this a while ago and just copied it. It is for cookies made with almond meal, xylitol, egg and butter.

Turn on oven to moderate [180 ºC].
Melt 50gr butter in saucepan add one egg and whisk to combine add about 1/4 cup xylitol [or to taste] and whisk untill creamy.
In a bowl put a packet of almond meal [250gr], a handful of oats or sometimes I use puffed millet, 1/2 cup of chopped nuts and/or seeds [what ever you have or see below].
Add the butter mixture and any flavourings and mix with wooden spoon.
Roll into small balls, place on non-stick baking tray and lightly flatten.
Bake untill golden and smelling yummy [about 15 mins].

Flavourings, my favourite combinations are:
-pecans and a handful of unsweetened carob chips
-pumpkin seeds with chopped zest of one lemon, 1/2 tsp both cardamom and cinnamon and 1 cm knob of grated ginger and a tbsp of coconut oil
-pue vanilla extract, cinnamon and slivered almond
Have fun and play around with spices and nuts etc

Notes:
The mixture should be dry enough to roll into balls without much sticking to your hands and wet enough to hold it all together. Add more nut meal or butter to adjust if necessary . After making it few times you will know how much of everything to use.
I always use organic eggs so I know they don't contain Antibiotics .

These are really quick and easy to make and they may not be the real thing when you have been so deprived of comfort food they are great. My husband eats them too.
