Wood Elf,

I noticed that quinoa is on the Unknown list. I've used it though because of it's protein content. Not that it's high inn protein, but it does have it, something like brown rice i'm guessing. Anyway, i was never bothered by it. You might try. It has a nice mellow flavor and cooks up in a curled fluff shape. It's good cooked in chicken broth.
