This is very true [rapid heartbeat can often be a sign of die-off] - I remember the very first time I took some grapefruit seed extract capsules shortly before going to bed one night - wow, my heart was racing like mad all night. The next day I felt a bit weird. Later in the day I had what can only be described as explosive diarrhea (sorry) - it was almost like the capsules had killed something and my body eliminated them the best way possible as soon as it could.
I've had candida for almost 16-17 years (now 29) - I can now handle a banana a day, *but* this is only after having been on the whole anti-candida warpath for a good few years - when I tried the banana a day approach a few years ago you would have thought I was pregnant as my stomach bloated and reacted so violently.
You have to listen to your body . . . if *you* are 100% okay eating certain things which might not normally be considered safe for the anti-candida diet, try it every few days and see what happens but do look out for any candida symptoms occuring soon after eating that food - if you notice a reaction coming on, then leave that food for a while and then try again in a good few couple of months - if no reaction occurs, then ok, you could be fine with that food, we are all different and we all probably have different levels/types of candida and are at different stages of healing, so it may be that you are actually okay tolerating small pieces of certain fruits now and again - but it's also important to rotate foods as much as possible and to avoid all sugars as much as possible. I feel like a hypocrite saying this as I know I eat the same things a lot of the time but it's out of sheer frustration and not having the time/energy to prepare foods in advance.
But above all, listen to your body - keep a food diary if this will help, and note down symptoms after eating each meal - if you feel like you can't see the wood for the trees, the diary can help you to track what is going on every time you eat a certain food and you can then get a better idea of what to avoid and what is safe for *you*. Also worth noting is that when we exclude the foods from our diet which are causing us harm, it allows the body to get a better chance at healing itself (so hopefully living on mung beans is not all in vain :) !)
