Hi Autumn - I can relate! My two favorite raw recipes are both really easy, and both incorporate kale in yummy, easy to eat ways. Try them and let me know what you think! I eat both of these at least 3/4 times a week.
ENERGY SOUP AKA BLENDED SALAD

A bunch of any kind of kale, deribbed
a half or a whole avo, depending on how thick you want the soup
some celtic salt
cayenne pepper (optional)
a squeeze of fresh lemon
a whole zucchini
some romaine or spinach or baby greens - whatever you like
Simply put it all in a blender and add some good water, and puree it all. When I first started eating this, I'd put it on the stove and gently warm it for about 5 minutes, till it was just ever-so-slightly warm, like maybe room temp. Now I just pour it from the blender into a bowl and eat it...it's so good!

MOLESTED KALE SALAD

This is a true raw foodist's staple, and my favorite recipe of all.
A bunch of kale leaves, deribbed and ripped into pieces
half an avo
a whole lemon, juiced
celtic salt (I use lots)
cayenne or regular pepper
a thick slice of red onion, chopped
a thick slice of red bell pepper, chopped
a whole tomato, chopped
Put everything into a large bowl. What you want to do is squeeze and knead the kale. You take handfuls of kale and massage it and break it down, using the rest of the ingredients to tenderize it and soften it. It takes about 5 minutes of kneading and squeezing it. While you're doing this, the avo and the salt and the lemon and the tomato get liquidy, which further softens the kale, and at the same time, makes a salad dressing for it! Yes, your hands will be totally covered in avocado and bits of kale - you get to lick it off :) I really love eating this, and especially like it really lemony and salty.
