In Asia, rice is soaked for hours, rinsed and ground--then dried in sun to make rice paper for spring roll wrappers.

How legal would this be on this diet as a transition food?

It would be extremely time consuming, to sprout and make these by hand. It can be done.

I have been craving fresh spring rolls with plum sauce.
