All good info and aligns with most everything I have investigated so I feel a lot more secure about refeeding. I know it will be a long process--at least 1/2 the duration of the fast should be spent slowly reincorporating food, incrementally. I hadn't remembered that protein can also be a source of Sugar so I appreciate your note on that as well.
I guess I need to continue the fasting until most of these symptoms subside. That is an usettling feeling--not knowing how long this will go on. I have a job interview on the 19th so I have a hunch I will need to cut this short in a week or so. Maybe I will get lucky and things will start falling into place more quickly by then.
I received some labs back--some slightly high numbers but a little concerned about high liver enzymes (in the 50s). I think this is a little normal but also a little concerned. It could be all the malic acid so I stopped taking it. I'm also not getting enough water--it is VERY difficult to get down. Adding salt water was intolerable so my electrolytes are low but I think I'm doing OK. Now drinking carbonated bottled spring water but barely getting enough down--so sick to my stomach all the time.
One question on the kimchi - I have had trouble in the past with fermented foods, likely because of my yeast/fungal issues. Hopefully if these issues are brought back into balance with the fast as it resets my gut microbiome and I won't have as many problems. I don't do probiotics, though--prefer to get all my pre and probiotics from food as it is more plentiful and balanced than a product.
I have checked out an awesome Korean chef on YouTube and eyeballed quite a few kimchi recipes that I'm looking forward to. One thing I've noticed since studying her videos is that the Koreans add at least 5 side dishes to every meal, all veggies and other natural plants and seafood along with kimchi. I think there's something to learn from this and might be a key to helping me rebuild my gut microbiome.
