Hi! I may be wrong but, it sounds as though you are thinking of ending because you have lost the ability to maintain a moment to moment experience and feel weary, maybe. You don’t want to feel as you did on your last fast, but are starting to.
You have lost 30 pound in three months, which is amazing. Because we purge so much water on a fast, and because you are purging even more in your exercise, some of that is water. I would strongly urge you to break this fast if you are going to continue to exercise at your reported rate. The only exercise really advised during fasting is more gentle than what you describe. I appreciate (and hope you do too) that your body composition changes from that kind of activity. You actually hit your “goal weight” a while back, but muscle weighs more than fat. Looks better, too!
I advocate for transitioning back into Keto for a while, just because that’s how you came in. I wouldn’t watch the scale from this point, either. You’ve met your goal. Watch the way your clothes fit and use that as a guide. When you transition out of Keto back to whole foods, expect to see some gains. It’s natural. I would (personally) focus on maintaining a 20 pound loss (not freaking out if 10 creep back on) for at least six months and, maybe, even more before dieting again. Our body wants to find a stable weight and stick. You have to chip away at it, in my experience.
I advise seeing a good nutritionist if you continue to find that eating clean whole food causes excessive weight gain. There may be something your blood work will reveal.
Lastly, I would also check in with a trainer about your schedule. You need rest and repair days after workouts with weights. I don’t want to you to work harder instead of smarter and wind up with an injury. Back and knee injuries can lead to chronic pain conditions that will keep you from doing what you need to do to stay fit as a mom.
