First of all, great job in getting to Day 12 of water only fast. Another great thing is you both, husband and wife are doing fasting together.

I have had a few fasts when my blood Sugar was also rising. But it went to normal. I have never figured out why this happens. I would not worry about it at all. Only thing I can think of is your body is eating fat rapidly and not using that much insulin, a good thing.

Keep it up. How many days do you intend to fast?
