A whole food plant-based diet could help you (many antioxidants, and depending on how many nuts and seeds you eat, it can be very low in fat, although you should eat some). For some more motivation to eat whole food plant-based you can watch a documentary called what the health. If you want more information about diet and diseases there's a book called how not to die by Michael Greger. I'm not quite sure how to solve your issue, although mine is pretty similar to yours.
