Sounds like you are on the right road food wise.

I would fast and during the fast carefully plot out your re-feeding... and I would advise a high fat diet.

and as belle said try to get through the first tricky days with fat!

Your insulin receptors will love you for it.

Then when you break your fast on maybe cucumber, avocado, slowly work your way up to proteins and fat...

and know that the answer is there!
