Good to hear you are looking after yourself.
Im on a one day wet - to fully rehydrate today (monday in AU) then will do 5 dry and 5 wet... I may even rinse and repeat. My hub is doing his own sort of fasting thing too I hopefully I can go longer too.
BUT>> I have been doing more research into this rapid weight gain... And we know that its carbs... from the liver filling with glycogen...
Now I have found something Called glycogen SUPERcompensation...
wow... so its basically when you deplete all the glycogen in our bodies (muscles and liver) the body freaks out and when we eat carbs - it SUPER COMPENSATES... and more so if you are not athletic.
And we know that with every gram of glycogen it can pull 3-4 times that in water.. adding to the weight..
In this link bodybuilders do it as a means to GET bigger on purpose for muscle comps (where as that isn't quite our goal)

I believe the severe depleting of glycogen via fasting, followed by the consumption of carbs has created a super compensation effect of some sort and the rapid return of weight is due to our muscles and our livers being loaded with more glycogen than we were accustomed to prior to fasting.
You see Belle, I continued to loose weight after my fast, but as soon as I ate carbs, my body grew rapidly - more in mass than even the mass of the food I ate... for e.g. if I ate a 400g soup - but the weight I gained was many times that... I believe it was from glycogen production and water being snatched and then stored in liver and muscles.
Im still reseaching.
