I do not believe clenched jaws would worsen your EC because i dont think that lips touching each other have anything to do with this problem. Also, there is no way on earth you can prevent your lips from touching food, toungh, or each other unless you are in a coma, breathing through your nose and being fed by IV - and even then, your lips will be touching each other or the air.

If you have a Gluten intollorance my advice would be to keep staying away from it.

However, a good posture isn't allways easy to acheive, and sometimes people think they have good posture but sometimes it could ce tricky because it has to do eith how you hold some internal organs and muscles. You could be looking in the mirror and think that your posture looks fine when infact you are not directing your body energy correctly. That is why it is important to be reading a lot on line on your anatomy and try to understand which muscles are designed to do what. this will make things much easier when you decide to practice your posture as you will be much more aware of your own body.

basically not being active enough phisically is as bad as poor posture (even if you do practice good posture) because it means your body is getting more fuel (food - calories) than it consumes - instantly building tension in your body.

when you are using good posture and your body isn't leaning constantly forward you will find that clenching your jaws comes more natural and you don't have to pull your jaw backwards in order to properly bring your jaws together. overall, your face will start feeling more "in place" and your nostrall airways will feel more clear because
A; certain muscles in your head and face will automatically lift the sides of your nose alowwing air flow.
B; by sitting UP there is less pressure on your lungs allowing them to reflexively pump air inwards rather than needing to force in air with every breath (which leads to mouth breathing because it is easier to force in air through your mouth than through your nose
as a result, there will be much less activity in your mouth area.

In the same way that your lungs are less pressured when posisioning yourself correctly, your digestive track will also be calmer and more efficient, i am sure that can't be bad for your celiac condition as your digestive track will get rid of unwanted allergens much quicker.

count in all the other benefits of good posture i mentioned in the other posts of this thread, plus, many more you can easily find online - i think it is safe to say that good posture is a good investment for your overall helth.
