I think whats really going on is cellular death by osmotic pressure(the reverse of what happens when you have high blood sugar/sodium) When you have too little minerals you can actually explode cells...which is what happens in fasting..blood Sugar goes down blood sodium goes down..mainly potassium is retained..and fat doesnt press on cell membranes it goes straight through as an energy source.
