Yeast produce toxins like acetaldehyde, zymosan, arabinitol, gliotoxin, and alcohol.

Arabinitol attacks the immune system, the nervous system, and the brain. Gliotoxin disrupts the DNA in the white blood cells and kills them. Zymosan causes inflammation and is associated with psoriasis.

But yes you are also right it could also be a autoimmune reaction
