I recently stayed at Victoria Bidwell's retreat house for a 14 day fast, plus a 7 day refeeding, and would like to offer my opinion.
First of all, Victoria is not running anything related to the health department - it is simply a "bed & breakfast" for people interested in a self-directed water fast. She was clear on this, and it suited my intention for what I was after. If you need more involved fasting supervision, then Dr. Goldhammer is recommended by many people, including Victoria.
The location was great, very quiet, and I very much enjoyed the space. I was able to make a campfire, and walk some beautiful trails at the beginning and end of my fast (when I had energy). Victoria was kind to check on me every day to make sure I had what I needed (water, firewood, etc.), and that there were no complications. She also supported the days during when I broke my fast via heirloom melons and other nice fruits, and gave great advice on where to go to see some incredible nature :).
Also, she provided transportation to and from the Burlington shuttle, and brought me to town after a few days of refeeding so I could rent a car and explore some the nearby National Parks. She gave good advice on the fast, and seemed to know quite a bit after studying fasting and being around it for so many years.
Overall, the program was suitable for me, but I can understand that some people may want a more structured setting, or they want Victoria to be different than she is. She is very eccentric and intense so I think many people would have difficulty with this, but all-in-all 99% of the fast is at the retreat house by yourself or with other guests if there happen to be others. I was the only one there during my stay, so it was nice spending the time alone, although there can be value in having others present too.
There is also a massive library of fasting and other books, which is nice to have access to during the fast. To reiterate, it is not a center for people that need directed fasting, which is highly recommended by almost every fasting doctor I've heard from, but if you are healthy and motivated then it could be right for you. If you are thinking of going there for a fast, feel free to write me with any questions or concerns. I would be happy to help with advice and so forth. There are a some lies and exaggerations I've read on this thread, so hopefully I can balance it it a bit through sharing my experience.
