Could the "throat swelling" be your thyroid and goitre? When the body is under stress and producing large amounts of cortisol it can make goitre far more pronounced.

I used to have something similar whenever my blood Sugar dropped. I would get a tightness in my throat. I am pretty sure that it was goitre bought on by exhaustion of nutrients. After I supplemented with pantothenic acid (vitamin B5) I stopped getting the problem whenever my blood Sugar dropped.
