Although I eat very little meat I think the body can benefit tremendously from it. By eating meat only 1-2 times a week I don't experience side effects of meat-heavy diets (difficult digestion, rotten poo). Sometimes I just naturally crave for some fish, liver or something similar and then I eat it. Being a huge egg fan probably helps me a lot in keeping my weekly meat portions between 0-2.
An elephant is an elephant and a human is a human. We don't exactly know how their and our bodies work chemically but we know that they are obviously different. Meat has always been part of our diet so the human body is quite good at dealing with it although I agree that people are overeating it. On the other hand meat and other animal products aren't only about protein, they contain quite a lot of chemicals that are very difficult to get from other sources. A few years ago I was researching vegan diet and it is extremely difficult to create a "balanced" diet, I actually failed to do so and most people would probably do so. Even if it's possible, it probably isn't affordable (time and money) for most people given the current circumstances in our world. I love vegan dishes but they would become very boring for me if I had to watch for full protein content and stuff like that. Eating eggs and some animal products saves me from that.
I think a fast can be completely and correctly broken in a few days but large portions should be avoided and heavy complex foods (other than juices, yoghurt, light fruits/veggies, etc) should be introduced only after having correct bowel movements.
Everyone should read how to break a fast but there is no official source. People collect info from a lot of random sources and combine them with their own experience.

Another important thing to consider in case of long term fast (3-4+ weeks) is that quick bulk refeeding can be lethal.
