Archus, doing an amazing job, as usual!!
Can you please elaborate on cooked potatoes having more vit C than raw potato? To me it seems counter intuitive, since heat destroys it. Is it because cooking removes a great deal of the water and per weight someone measured higher vit C in under-cooked potatoes?
