I believe Budwig used cottage cheese in order to work with less fats from the milk itself - CC is very low in fat compared to milk and yogurt.
It helps also with avoiding unnecessary hormones, wich are fatty substances (estrogen, testosterone, growth hormoe, which promote cancer are steroids, i.e. cholesterol derivatives, i.e. technically fats, that are put away or reduced when making cheese)
