This measure is for the inactive vit-D that the kidneys are then supposed to make it active. So your inactive D is 1 unit below the lower limit.
In the future it would be best if you aim for about 50-60.
Potassium levels vary from person to person. You may have had it at that level for years. Usually should not be a concern. How to take care of the mineral balance? -- leafy greens are invaluable in that regard. You should also check them at least once a year, until you establish that your kidneys are doing well.
One can opt for straight replenishment (given the soils are now depleted) by using drops like Concentrace TM, powders like Magnesium citrate, Potassium bicarbonate, Coral calcium to name a few. I have used all these and they seem to get you good results. I don't use them constantly, but when I feel my diet has been low on greens. I probably have had 2 pack of Mg and Coral Ca, and now don't really take them anymore, since I am betting on heavy home made leafy greens juices.
Given that you will not fast beyond 21 days, as you stated already, you will probably not get to low on potassium. I would do prophylactic sea-salt (not table salt ! - there is just few brands that have potassium in table salt ) feet soaking. And if you feel you may benefit from it also Epsom Salt soaking. For your next fast you can opt to replenish minerals before starting it.
