Thanks for your very nice comments! I really love this place, and anything I can do to help anyone find their way along the cleansing path... boy I'll sure do it! It's WORK! But such wonderful rewards!
I love thinking about your kids and husband supporting you. We see far too many posts from people who do not have the support or understanding of those close to them, and I know it makes tough going tougher.
I live in Mexico, and natural stuff, whole grain stuff etc. is still hard to come by. At one time I was baking over 30 loaves of whole grain breads every week, selling every crumb! I started because I couldn't get what I needed, then people just started begging me to bake "one more" for them, too! Anyhow, my favorite part of that whole experience was watching the two young boys of my best natural food friend enjoying my bread. They STILL hold that bread as their personal standard of what's good, even though they have moved back to the States and have lots to choose from! How cool for kids to become conscious eaters! Good for YOU!
Unfortunately book stores are another scarce commodity! I still use my old faithful Laurel's Kitchen, and am now cooking quite a bit out of Dr. Dean Ornish's heart disease reversal diet, as my partner Carlos had a small heart attack the 8th of August. It is EXTREMELY low fat, 10%, 5mg cholesterol! Standard diet is about 50% and 4-500mg!!! Weird thing about very low fat vegetarian diet, you have to eat a LOT to get/stay full!!! I add a very small amount of chicken breast/fresh fish and flax oil to the recommended diet and do a lot of COOKING!
I made falafel yesterday, started with fresh cooked garbanzos and it came out GREAT! I baked it on a non stick skillet with a little Pam and froze those little suckers (what we didn't eat). Yumm! I make fat free tortillas, just whole wheat flour, water and salt, and they're wonderful for veggie burritos, or like a pita with the falafel (the trimmings are cucumber, tomato, cilantro, yogurt flavored with garlic and salt, lemon juice, chopped lettuce...
Freezer to microwave is the only way! I have three kinds of beans, plus extra cooked brown rice to throw in soups etc. stuck in the freezer, plus a big bag of Costco frozen blackberries to throw in papaya yogurt smoothies for yummy breakfast!
It's a challenge. Once you become conscious of the trash you've taken OUT, you really start to pay some attention to what you put back IN!
