The idea I'm going on, is that the digestive problems caused the candida, and not the other way around. And if the immune and digestive system is strong enough, it will balance out candida on its own. But being on too strict of a candida diet can make the digestive and immune system weaker, perpetuating the problem. Candida is a protective mechanism that tries to protect the body from damage, a candida population can bloom and die within hours, it's only when you got other underlying issues that it becomes chronic.

I personally, find white rice is easy to digest. I do have problems with brown rice and other grains due to the phytic acid and other anti nutrients. In many schools of thought, white rice is considered to be a safe grain for digestive problems because the bran and hull is removed.

Grains mainly consist of polysaccharides like starches which can be broken down into disaccharides such as maltose. You would only really have trouble breaking down those specific carbs if you're body is missing a particular set of enzymes. Which will depend on the individuals constitution.

In my more intense cleanseing phase I did lots of coffee enemas, apple cider vinegar enemas, h2o2 enemas. Plus taking anti fungals, anti parasitics orally and keeping a very strict diet. Personally, I think it's only healthy to do that for a short period of time. I found I felt better, my symptoms cleared up, then I got worse. Once I got worse is was time to move onto something new. After that you may damage yourself. I think my bowel is a little sluggish because I did too many enemas, even though the enemas did clean me out.

Of course, in the end follow your own intuition on the matter. My intuition told me I needed a new approach, and it's working really well. I'm getting more energy, my bowel movements are getting more regular, my brain fog is gone, my vaginal itch is minor and sporadic and my bloating is minimal. So it's working really well for me, and I was dealing with this problem for about 4 years before I got real serious about it.

Anyway, good luck, follow your gut I'm sure it'll take you to the right places!
