From what I researched about candida, it DOES NOT routinely become "chronic/systemic" as a lot of alternative medicine believe, but that candida overgrowth is just a symptom of a weakened immune system caused mostly by prolonged under-eating and it just happens that all the tons of symptoms blamed on candida are the same tons of symptoms that can be caused by malnutrition:

Diet-wise, I recommend high-carb/low-fat diets. I mostly follow the Raw Till 4 diet which is similar to 811 and might be better for you to try, especially in winter. Starch Solution and Engine 2 are other HCLF diets I recommend people look into, whether people want to go full vegan or not.
