To make this drink "cooler," keep the ingredients in the
fridge and/or freezer until ready to make.
VITA-MIX until smooth
the meat of 4 large kiwi fruit
2 cups cubed pineapple
1 cup coconut cream or coconut milk
juice of 1 lime
6 fresh mint leaves
8 large ice cubes.
GARNISH: Impale onto skewerS a thin-sliced kiwi round
with its peel left on and a pineapple wedge with its husk left on. Balance the skewers across the rims of the glasses.
