I would surmise that S. boulardii works against candida by competitive inhibition. This not only involves competing for the same nutrients and "spot" in the gut, but also through the release of inhibitory molecules. Of course bacteria can also do this, but since S. boulardii and Candida are both yeasts, they are much more closely related genomically so their mutual inhibitory mechanisms are probably much more finely tuned.
