I have looked for an "official" source on the statistics quoted here, in particular the info on MS rates jumping 50% between the 80s and 90s.

Hmmmmm. Weren't Iodine based dough conditioners removed from bread around 1980? And replaced with potassium bromate based dough conditioners?

That would definitely be a double whammy . Suppressed thyroid function due to the potassium bromate and an autoimmune response from the wheat.

Could certainly be a part of the picture.

I'd love to see a table that showed the rise of autoimmune diseases in general since around 1980 or so.
