Aren't frozen veggies blanched before they are frozen? In other words, boiled in water? I would think this may kill some of the enzymes, right?

Either way, maybe I'm overthinking it like I usually do, but when I let these veggies thaw out, they look like complete and utter mush. I have trouble believing that they do much for me fiber wise... someone correct me if I'm wrong.
