Celiac disease seems to affect the microvilli in our intestines. They're hairlike structures on our intestines that help move the food along.

Some people say that as time passes, their fecal bo gets worse. I have a theory. Could it be that with time more and more microvilli are damaged and it's harder for the food to pass through the intestines? As a result, the longer the food is in there, the more likely the food is to ferment and we smell like fecal odor? Could that also be the reason we're constipated? The microvilli are damaged and can't move things along?

While reading online I came across literature that said some people who have a gluten intolerance might also develop allergies towards foods such as cheese and soy. This is due to the microvilli being damaged.

There is good news. Microvilli heal on a gluten free diet. :)

Once the microvilli are healed, the article says it might be possible to incorporate foods we developed an allergy to but not gluten products. Sorry, no more gluten products or it's back to square one.
