As a pixie i can certainly offer my 2C concerning mushrooms! ;-)
Ha...seriously tho', i love mycology and have spent over a decade studying mushrooms of all varieties and often forage for wild ones.
Mushrooms get a bad rap generally nutritionally - yet they're an excellent food.
The copper content depends on the soil of which the mushrooms are harvested.
Any copper content would be bio-available. So if, like many you have copper toxicity from non-bio-available copper sources (plumbing etc) yet biologically you also have copper deficiency, to include copper foods would relieve the bio-deficiency.
Shiitake and reishi show in studies to boost the immune system and i think they're a good choice and shouldn't produce too much adverse symptoms.
For the ultimate mushroom immune booster - i would opt for Chaga....or maybe you could find a blend with Chaga in it? Altho' perhaps the chaga content would be small.
Chaga is excellent for allllll sorts of ailments and it's cancer-fighting properties are finally being realised.
You can buy the actual mushroom (which doesn't look like a mushroom but a lump of brown mud!) from Canada and Russia. You could make your own tincture, it'll be cheaper, or you could put a lump of it in a jug of water that you keep in the fridge, stir it every so often, to have chaga-infused water.
I used store-bought Chaga tincture when i had a serious respiratory infection that wouldn't go and it helped immensely.
As ever, start with a few drops fr a few day and see how you feel and build up from there.
