Overall, dollar for dollar, I think that the most effective way to help our health is Liver Flushing (more than one) and mono-fruit fasting such as grape diet or orange juice (done carefully).
If I was at death's door or had cancer, yes I might do the Incurables program and maybe even go see Doc Sutter.
Yes I've heard that Dr. Christopher agreed with eating meat and fish (even though they're acid-producing). He was a person with his own appetites for certain foods, just like the rest of us, and maybe he didn't want to give up eating meat. It's a known fact that rich foods are harmful. The simple mono-fruit diet is ideal but of course, no one wants to stay on such a diet, we want to enjoy other taste combinations.
I think that eating beans and rice and vegetables and often high fat vegan diet high in nuts and tofu-type products is not health-giving. I don't think meat, fish, etc., are good either but it's more that I have no desire for them. It's the flavorings that restaurants etc. put on the meats that make them tasty. And from what I read, almost everything packaged now has msg, which is addictive and makes us eat more.
Dr. Christopher was a master and a pioneer of herbs. Ehret and some of the "old" doctors were highly knowledgeable about fasting. i'm trying to put the two together, along with use of essential oils and removing toxic chemicals from the home.
I don't think that vegetables are the best foods because I think they have bigger minerals that are too large for the body to use. I think babies are pretty smart; they're naturally in tune with all of this until they're educated/conditioned otherwise. For example, as a child, I hated vegetables and loved fruit (I'll eat apples over brussel sprouts any day).
Also your words below, I highly agree with:

Genetics (what we're born with health-wise) makes a difference too.
That being said, it is largely what we eat and drink that's made us sick, IMO, along with dental metals.
