OK, I'm not a dermatologist, but I've had my share of skin issues and have seen other people go thru it.
The lines are very common in athletes and I don't know if you want to call them stretch marks or something else, but they look very similar to a typical stretch mark. My husband got them when he was working out too much, near his underarms (inside of his upper arms), when his muscles were expanding (due to weight lifting exercises). I've had some very similar to the ones on your knees right on my knees, when I had an extreme case of food allergies all of a sudden due to this bacteria in my body and I started to lose weight drastically. The weight loss caused the lines to appear right at the location where they're on your knees. Weight gain or weight loss can cause stretch marks, and there's no cure for stretch marks once you get them. You can only minimize their appearance. They only way to prevent future lines is to apply lotion/moisturizer before or after the workout, or before/after you start to go on a weight loosing/gaining diet. The dry skin causes the skin to expand (in case of weight gain) and the skin looses it's elasticity and shrinks (in case of weight loss), causing the skin to stretch or shrink. They are more apparent on tan or darker skin-toned people, but not as apparent on lighter skin tone, because the bottom layer of the skin is lighter. Please don't feel embarrassed about this, as it's very common and it's NOT a disease (but it may be related to genetics). The only thing I was confused about on your post is when you said that sometimes they'll disappear within few hours. Try to notice it, is it when you eat/drink that they'll disappear or you do something different? Get to know your body as much as you can. For me, I noticed that every time I eat, they become less apparent, because my metabolism is really fast, I'll lose weight right away and if I eat anything fattening/dense, I'll gain weight too (but not as fast as lose the weight). Also, just wanted to point out, I've had one of these dents appear on my face (very small though), but I never had any Acne or any skin problems on that area, that dent just appeared out of no where. It'll sometimes disappear when I gain weight on my face and appear again, if I miss some meals or start losing weight.
You also mentioned that you were eating fish for a while. I know fish is good, but the mercury in fish does some weird things in our bodies. I had started getting eczema at one point when I was eating tuna everyday for couple of weeks. When I stopped eating tuna and it went away, so now I don't eat tuna every day, I'll eat it once in a while and I'm ok with that (no eczema eruptions on my skin or scalp).
