Yeah unfortunately it can take several weeks for an offending food to clear your system. Diet is such a huge piece of the puzzle and it can be so incredibly confusing to figure out what works and what doesn't. It took me two years!! The most important thing to remember is that you've got to onlypay attention to what works for YOU. There can be tons of people out there saying a food is bad to eat, but it could be just what your body needs. I avoided potatoes and dairy for the longest time because the health gurus had me believing they were harmful to me, when in fact they have both served as an important catalyst in my healing.
Also, don't try to force things on yourself that make you feel horrible just because they are supposedly good for you. I spent a year eating loads of "healthy" veggies and they made me very sick. Not saying this is the case for all but it certainly was for me. I live on milk, butter, home made ice cream, potatoes, rice, Sea Salt , mineral water, and the occassional egg or piece of fish...and I have never felt better! The only vegetable I eat aside from potatoes is the odd piece of Celery here and there. I quit eating all other vegetables, fruits, and land meat. I would like to be able to expand my diet in the future but for right now I am truly on my way out of the tunnel so I really don't care if this is my forever diet.
Many would warn me that this is an insuffiecient diet but in fact I've done plenty of research and it turns out that my Irish ancestors existed on almost the exact same diet for many many years.
Follow and trust your body. Have patience, and pay no mind to what anyone else says isn't good for you because there is only one you. Good luck :)
