Im so sorry you are experiencing the nightmare of this stress disorder!
Your ND is very correct, breathing excercises, light yoga and meditation are the fundamental basis of overcoming AF. However you mentioned vitamins and Iron, the iron rings a bell immediately - Have you been checked for low FE serum by your GP? Remember ND's and their potions can be just as dangerous as doctors with their pharma meds, so research nutrition, learn about vitamins, read all the pages on this forum, study herbs etc For me, only when i stopped listening to others, and took the job of fixing me back into my own hands have I made progress.
One thing to be careful of is all the crazy ideas on here! - you will find, or be bombared with a hole host of confusing and sometimes wacky subjects such as liver flukes, copper and heavy metals detoxing, mega dose vitamin C, candida, coffee enemas and a whole host of other random concepts. What works for one, dosent work for another. So before you embark on a course of therapy for yourself, do lots of reading, and dont buy in to the all the stories to much! Also check whoever is offering advice by reading their own posts, there are lots of forum trolls who like to give advice, but have no story or healing progression noted of their own.
The coffee could be a big problem as you are prepping yourself up on stimulants to avoid crashing. I did this for years, many on here have, ideally, you need to stop the stimulants, only then can you tell what sort of levels your energy is at.
However Dr Myhill in her Chronic-Fatigue-Syndrome book actually claims Coffee is a good idea. I trust her more than the other pracitioners you will come across on here.

Others have had luck (but also damage with Dr Lam) but his book will be worth a read for you. However his is a marketeer and scare mongerer, but he has good knowledge.

You mentioned your cortisol is high? Did you do an adrenal profile test to measure that?
As for inflammation, there are three herbs that will help sort those out. Tumeric, Quiertin and Bromelien and magnesium.
This is your journey, and you will need to find the best ways to overcome it. You will get better, just find focus in that. Some people used vitamin protocols to great success, I however found they damaged me more, and only when i stopped taking lots of vitamins have I started getting better. There is no disease due to lack of supplements. Everyone is different, and you are unique - your problems or way that the stress has manifested itself will be different from anyone else and only you can figure what caused it, and how to tackle it out.
Ultimately you need to STOP. I know this sounds insane, but until I STOPPED I was running on adrenaline for years and never getting better, always getting worse, when i stopped, I crashed hard but at least I knew what condition I was in then and could monitor my progress from then on. Rest, and condition your mind again through meditation, art, music, avoid people or activities that drain you etc. Learn to operate at a lower, slower level for a while, let the body heal itself. The healing power is already in you.
Lots of good folk on here that will chime in I imagine, but good luck to you, just remember, you WILL get better once you concentrate on fixing yourself. Its tough at the start, especially with the meditation and yoga, you dont think you can do it, or you dont think its doing anything, but it is, it just takes time, and also remember, once you have removed all your stressors, time is the greatest healer of all.
