Dear MH,
I have been wondering how safe is the consumption of soy lecithin
Soy lecithin as I understand it, is a by-product of the process of soy oil production. Soy seed unlike a lot of other plant seeds has a low oil content and therefore the oil can not be economically extracted by cold/hot extraction /expelling and has to undergo "solvent" extraction. So the world over solvent extracted soy oil is available. Therefore this oil needs to be refined to be fit for human consumption , and cannot be ingested in its raw state. The by products - lecithin being one of them , is a result of this solvent extraction process. This lecithin is therefore used for industrial use. In order for it to be fit for human consumption , they need to get rid of the solvent, normally hexane ( if my memory serves me right) . The lecithin is therefore "refined'. Is this lecithin good for our consumption.
I know you recommend it, and therefore I wanted to be sure , that it is indeed good for our bodies, given the process by which it is made available to us.
