"felt HORRIBLE once after eating old french cheese" Was it blue cheese? If so we may have a breakthrough here. Blue cheese actually had the effect of reversing my die-off symptoms, but it ended up working too slowly in the long run. If you still have a well-established candida infection, it's possible that it would have made you feel much worse. Blue cheese actually contains a mold (mostly harmless) which seems to interact with the candida. From what I experienced it actually seemed to remove some of the candida toxins, but like I said when I tried out blue cheese I was already in an established die-off state, so it would probably have a paradoxical effect if I was not. Let me know if it was blue cheese or not, this could be an important clue. -tpno2005
P.S. Actually any type of cheese could have affected you. All cheeses (except a small few) are cultured with beneficial bacteria, usually lactobacilli cultures. This helps them develop taste and texture. I've found that I've had die off reactions to most cultured foods (cheese, yogurt, buttermilk, soy sauce, etc.). This may have been what happened in your case.
