Stainless steel has its issues, but it's prefferable to aluminium. Cast iron pots and pans are a better alternative if you want to stick with metal cookware.

Glass and ceramic are non-toxic and much easier to clean than iron, but if you tend toward being butter-fingered they can be costly.
