I have both water and milk. The water kefir is also good for regulating glucose (suppose that's what the probiotics are doing anyway - eating Sugar content in mixture).

Milk Kefir - my kefir for some reason do not do well with raw milk - goes to clumpy. We use ordinary milk (we have A1 milk which doesn't have the protein strain that Onwards talks about and is very white and fluffy yummy tasting milk)which includes all but no UHT milk or low fat milk.

Just have to remember to not put anything that can kill the bacteria in the kefir eg honey in them as apparently it can kill the good bacteria - after all honey are strong antimicrobial. I was also advised to take kefir on empty stomach and then drink some water afterwards to dissolve stomach acid so that the kefir have a chance to make down the stomach tract without being killed off too quickly by your stomach acid.
