I thought about that too, however, it may also have something to do with boiling the crap out of it as this will reduce the presence of fungus and at least some of the mycotoxins which are, unfortunately, common in coffee.

Organic Arabica beans being the least affected apparently from what I can gather... however, just get the healthiest (grown properly) freshest product that you can.
