Well that is one way of looking at it. Not here to pick a fight or be arugmentative, just provide another perspective. Craig makes good points, A can certainly lead to B, but B can also lead to A IMO. Gut and CNS/adrenal issues are closely intertwined, I wouldn't get hung up on which causes which because its a relational not linear in my opinion.

My 2 cents would be to say that:
A. I think you are on the right track, I've down a similar path myself/
B. Google 'Niacin flush test', there is a simple home test that is sort of reliable for histamines
C. You can order whole blood histamine tests for about 60-70$ as well online.
D. My advice might be to start in the gut rather than with the adrenals or CNS. Clean up your diet, eliminate foods that bother you, take a strong probiotic (probably in capsule form if histamines are an issue), and start taking an antifungal (garlic, coconut oil etc.)

I have found gut issues a little bit more accessible to deal with as opposed to adrenal/anxiety issues, basically they are just easier to treat yourself. The relationship between the two is symbiotic so as I have improved one the other has improved also (if I backslide in one I do in the other).

Ex: More stress = more issues with digestion and food. Or if I eat a bunch of junk I find I don't sleep as well, get anxious, brain fog etc.
