I'm currently doing exactly the same. There is still some build up present in some areas (some is a very thin layer of dry skin and some areas it's kind of like a thin callous). I've never seen my lips look this great and I'm just trimming off the dead flakes as it "very slowly" exfoliates. When I say "very slowly" I mean it has been doing this for the past month. You truly need to forget about it and leave it alone (no peeling/picking whatsoever) for it to truly heal. I'm glad to report that the areas that have exfoliated are perfectly normal and have been this way for weeks.
