I am a reasonable good cook, do everything from scratch, but I never use recipes; except for the first time I make a dish, just to get started. Then I experiment.

But, roasted potatoes, where you boil the potatoes a little first, then roast them with duck fat and spices like garlic and oregano, always a hit :)

The duck fat makes them extra crispy. Never managed this with olive oil or butter.
