I've read the more you drink the more the body craves water. Just like anything you ingest, the body becomes accustomed to it and expects an amount that its used to getting.

EDIT: As such, I believe once max hydration is reached the body just ignores the excess water being ingested and dumps it out quick. This why you have clear Urine.
