You live in Florida? With young coconuts? Lucky!!

Yes by the time they get to Canada they are a little older, a little browner and usually moldy because they have started wrapping them in plastic. I live in a small city that doesn't usually have young coconut but maybe I could special order these.

Your recipe sounds wonderful!
