The founders of the 30bananas site talk about this. Their recommended calorie minimums are mostly for low-stressed sedentary people, but anyone who has any type of stress going on in their lives, whether that be a busy job, exercising more, or stressed with an illness, they should increase their calories.
Their recommended minimums:
Females = at least 2,500 cal per day
Males = at least 3,000 cal per day
Being under-caloried like that can be causing a lot of your problems. I've seen a lot of people on here now that I've looked how people have ate who showed signs or admitted they weren't eating enough when doing a vegan or raw type of diet. It's the number 1 problem with those types of diets, yet they'll just blame it on the diet. You should probably be aiming for at least 3,500 cal per day and see if that starts making a difference.
Are you having any digestion problems where it might be hard for you to eat higher volume of fruits and vegetables? That's been a bit of a struggle for me since years of eating heavy protein and fat diet also wrecked my digestion and I'm sure left my small intestine in terrible shape. I wish it wasn't winter where I'm at so I could try to go fully raw for a while to see how much that makes a difference.
